Chunky Vegetarian Chili
only 5 points per cup for WW!!
Yield: 7-8 servings (serving size: 1 cup)
Ingredients
* 1 tablespoon canola oil
* 2 cups chopped onion
* 2 chopped red bell peppers
* 3 garlic cloves, minced
* 1 tablespoon brown sugar
* 1 1/2 tablespoons chili powder
* 1 teaspoon ground cumin
* 1 teaspoon dried oregano
* 1/2 teaspoon salt
* 1/2 teaspoon black pepper
* 1 cup frozen kernel corn
* 1/2 cup water
* 2 (16-ounce) cans stewed tomatoes, un-drained
* 1 (15-ounce) cans black beans, rinsed and drained
* 1 (15-ounce) can kidney beans, rinsed and drained
* 1 (15-ounce) can pinto beans, rinsed and drained
Preparation
Heat the oil in a Dutch oven over medium-high heat. Add onion, bell peppers, and garlic; sauté 5 minutes or until tender. Add sugar and remaining ingredients, and bring to a boil. Reduce heat, and simmer 30 minutes.

Update to Life
Well now..it's been way too long since I've blogged. Lots of things have happened over the last 3 months or so.
1- Thanksgiving and Christmas were good. I ordered a turkey from Lasting Legacy Farm and had Nana cook it at her house since we ate there. It was yummy! I actually have thawed out the last of the Tex Mex Soup I made with it for this week for dinner one night. I also made the raved about Key Lime Cheesecake from Bon Appetite. Yummy!!! Christmas was good too. Glad the holidays are over though.
2- Joined Weight Watchers online on Dec 29th. Silly right? Right before the 1st but hey it's working!! I have lost 6 lbs and lots of inches. I did Jillian Michael's 30 day shred for two weeks. It killed my ankles and knees though...damn it. Now I have been trying to do Denise Austin's customizable workout dvd. It's tough though when the kids get up so damn early! I feel so much better though when I do workout. Here's to continuing this trend!
3- I started online classes at SNHU to work towards a Bachelors in Accounting so I can become a CPA. My first class is Intro to Marketing. So far so good but the teacher is very lenient and an easy grader. I don't know if this is good or bad for my first class. My next class starts 2/28.
4- Rad will be one in 17 days!!!!!!!!!!!!!!!!!!!!!! AHHHHHHHHHHH! sorry. It hurts my heart to think of this since he is my last baby. So sad! He is almost walking..Colton walked at 11.5 months. We are having a friend party at Twice The Fun and a family party the day after at our house.
